I'm back!

I had foot surgery April 25th. While I tried to stick to my plans as much as possible, it was modified. I had made some double batches in previous weeks and put the meals in the freezer. Also, not going to lie, we got take out a few more times than usual. We also know May is crazy for parents and teachers -- and we are both!

I also wasn't in much shape to do a big grocery shop, so I've been working with what I had already, supplemented with small shopping trips for myself or my husband. This past Thursday I felt up to a full shopping trip and planning. My foot was cranky, but I survived. Today I prepped almost everything for the next two weeks and its waiting for me in the fridge or freezer. This means I really have no excuse to not stay on track...

Marching On

January was the longest month ever and then I blinked and February was over! Spring is around the corner, but we still have some time for warm comfort foods! I've been experimenting making some casseroles, and loving the result. The next two weeks are a bunch of new recipes, with some old favorites peppered in. I will be having surgery on my foot in April, so I'm also going to be making some doubled up recipes to have on standby in the freezer.

Brrrr It's Cold In Here...



Bacon Spread (From an email my mom sent me December 12, 2006)

BACON SPREAD
3 – 3 oz. Packages cream cheese
 (One 8 oz. Package cream cheese works well also)
1 lb. Bacon cooked crisp; cut into small pieces – reserve 1 Tab. Fat
LARGE tomato – diced small cubes
½ cup mayo.
Pepper to taste
Mix together and chill.  Serve on French bread sliced and toasted*
*slice bread, brush each side with olive oil & toast under broiler til golden brown.  Watch carefully so as not to burn it.

These are a few of my favorite things...(Slow Cooker edition)

A recently retired friend messaged me asking for suggestions on either purchasing a slow cooker or Instant Pot on her limited budget. It got me thinking that I have strong opinions about the appliances and other helpful products that keep me sane!

The one thing I cannot live without is this slow cooker from Hamilton Beach. Not only is it quite inexpensive, but it has timed cooking. One of the biggest complaints I hear about slow cooker cooking is that food is overcooked. With this you can set it to cook for 6 hours and it'll switch over to "keep warm" until you are ready to eat. The meat probe is also great for roasts, whole chickens and more. You set the desired temperature and it kicks over to "keep warm" when the temperature is reached.

On the topic of slow cookers, I also swear by slow cooker liners. I buy them in bulk on Amazon here, but the standard 4 packs are quite inexpensive at the grocery store and coupons are often available. The liners enable a quick clean up and your slow cooker is ready to use the next day!
Also, here's my best meal prep tip! I place a liner in the slow cooker and prepare a meal. Then I take out the liner and roll or twist the top and place everything in a freezer bag I've labeled with the contents. I then can freeze the meal, usually flat, and have it on hand for an easy dinner. I can just take the bag out of the freezer and put it in the refrigerator the night before and then plop it in the slow cooker in the morning. As a bonus, thanks to the liners, the freezer bags just need a quick rinse to be reused.
So now, you're thinking, "That slow cooker is way too big for just me!" Well, that's where my other favorite things come in.

These containers are the perfect size for leftovers to be frozen:
"But how will I remember what is in each container??" These AMAZING labels dissolve in water! As in, when you run the containers through the dishwasher they come out label-less!
And finally, what can you do with your perfectly portioned leftovers? You need a Crock-Pot Lunch Crock! This small crock will heat up your food and keep it warm in time for your lunch break. It features a dishwasher safe removable insert. Being able to eat lunch without waiting in line for the microwave at work has been a game changer! I leave the crock at work and bring the insert back and forth to wash.

Getting Started




      Anyone who knows me can tell you that I love to meal plan! I’ve found that planning out our meals decreases waste and the need to eat out or get take out! I’m starting this blog to share my meal plans and any helpful planning and prep tips I can think of! 

 For starters, I’m sharing our current meal plan. We eat mostly Keto and often save leftovers for lunches. We did eat Paleo for a few years, so you’ll see old favorites pop up from time to time. I plan out the main dish and always have frozen veggies on hand as sides (and brown rice for the husband). I mostly use my Instant Pot and Crock Pot, but do use the stove from time to time...
