January was the longest month ever and then I blinked and February was over! Spring is around the corner, but we still have some time for warm comfort foods! I've been experimenting making some casseroles, and loving the result. The next two weeks are a bunch of new recipes, with some old favorites peppered in. I will be having surgery on my foot in April, so I'm also going to be making some doubled up recipes to have on standby in the freezer.
- Saturday 3/9:Instant Pot Chicken Parmesan with zoodles (I zap the zoodles with a little evoo and garlic) - The recipe says to use low pressure and that left me with raw chicken the first time! I made this with regular chicken breast, 8 minutes high pressure, perfect.
- Sunday 3/10: Instant Pot Big Mac Soup
- Monday 3/11:Asparagus Egg and Bacon Salad with Dijon Vinaigrette
- Tuesday 3/12: Low Carb Crustless Taco Pie - Made ahead
- Wednesday 3/3: Sausage Egg Roll in a Bowl
- Thursday 3/14: Cream Cheese Stuffed Everything Chicken
- Friday 3/15: Seasoned Pork Roast (had a coupon)
- Saturday 3/16: Five Minute Garlic Parmesan Chicken Tenders
- Sunday 3/17: Corned Beef and Cabbage
- Monday 3/18: Keto Reuben Slaw
- Tuesday 3/19: Tacos and Taco Salad
- Wednesday 3/20: Hamburger Beef Stroganoff
- Thursday 3/21: Crustless Broccoli Cheddar Quiche
- Friday 3/22: : Instant Pot Now and Later Keto Indian Butter Chicken
