New Year, New Me...or something like that

Now that the craziness of the holidays has passed and been replaced by everyday craziness, I'm really working on making sure I feed both my body and soul in a healthy manner (cheesy I know). I'm focusing on the food we eat, but also making sure I make time for me, write down something good about each day, get in exercise (in the morning!) and make time for relationships with family, friends and my students.

But....my husband and I have tickets for this upcoming weekend to go to TACOS AND TEQUILA at the casino. So, while I intend to stay on track for the rest of the month and moving forward, January 19-20, all bets are off!

Without further ado, here's my meal plan for the next couple weeks:

I'm back!

I had foot surgery April 25th. While I tried to stick to my plans as much as possible, it was modified. I had made some double batches in previous weeks and put the meals in the freezer. Also, not going to lie, we got take out a few more times than usual. We also know May is crazy for parents and teachers -- and we are both!

I also wasn't in much shape to do a big grocery shop, so I've been working with what I had already, supplemented with small shopping trips for myself or my husband. This past Thursday I felt up to a full shopping trip and planning. My foot was cranky, but I survived. Today I prepped almost everything for the next two weeks and its waiting for me in the fridge or freezer. This means I really have no excuse to not stay on track...

Marching On

January was the longest month ever and then I blinked and February was over! Spring is around the corner, but we still have some time for warm comfort foods! I've been experimenting making some casseroles, and loving the result. The next two weeks are a bunch of new recipes, with some old favorites peppered in. I will be having surgery on my foot in April, so I'm also going to be making some doubled up recipes to have on standby in the freezer.
